Vegetarian Enchiladas

Ingredients:

  • 1/2 Cup Onion chopped
  • 2 Cloves Garlic
  • 1/2 Cup Green Bell Pepper chopped
  • 1/2 Cup Red Bell Pepper chopped
  • 1 Cup Celery Chopped
  • 2 1/2 Cups of Corn
  • 1 LB. Black Beans
  • 2 Roma Tomatoes
  • 2 to 3 Cups Spinach
  • 1 lime
  • 1 Cup Green Chilies or Green Enchilada Sauce
  • 11/2 Cups homemade or 1 can Cream of Mushroom Soup
  • 2 tsp. Cumin
  • 1/4 tsp. Cinnamon
  • 1 tsp. Red Chili Flakes
  • 1/4 tsp. Cayenne
  • 1 tsp. Paprika
  • 1 tsp. Chili Powder
  • 1/4 tsp. Fresh Oregano
  • Almond Pepper Jack Cheese ( or what ever you prefer)
  • Fresh Cilantro
  • Corn Tortillas
