This dish was hard to photograph. We cooked it in butter so it had a shine to it so it was difficult to get a good picture. I have been reading quite a bit about cooking pork and one of the best suggestions we read was to cook it like a steak so it doesn’t dry out. We decided to give it a try to cook it like we cook steak.
Verdict:
Everyone liked the texture and how tender the pork chops were. They were a bit divided on the rub. We figured out that it wasn’t well blended so that some spots had more Cayenne and Paprika than others. Warning, make sure your spice blend is well mixed and rubbed in all over the pork so you don’t get pockets of only one spice.
